Every inch of land has been sculpted, first by the elements and then by generations of inhabitants whose goals were always twofold: make the land produce as much as possible, make the land as beautiful as possible. Tuscany enchants us today because it holds together as a region, from the tiniest hamlet to Florence the Magnificent.

Lo zafferano di Firenze - Firenze in Toscana
Lo zafferano è una spezia che vanta una storia plurimillenaria. Conosciuto fin dall’antichità nell’Asia Minore, dove pare venisse usato per tingere stoffe e oggetti di vetro, successivamente se ne scoprì l’uso gastronomico e medicinale. Intorno al ‘200 comparve in Italia, sembra ad opera di un frate domenicano; la sua coltura ebbe molto successo, soprattutto in Toscana. Le zone di Firenze e Siena erano quelle di maggior produzione. Importanti citazioni qualificano lo zafferano del contado fiorentino come uno dei migliori in assoluto. Il capoluogo toscano era un centro di mercato internazionale per il commercio dello zafferano. Per distinguerlo dagli altri veniva chiamato “Zima di Firenze”. I preziosi stimmi costituivano una ricercata merce di scambio, mentre i fiori venivano utilizzati per abbellire le tavole di sontuosi banchetti.
