Lo stufatino appartiene alla tradizione "povera" della cucina fiorentina. Era infatti uno dei pochi piatti di carne accessibili anche a chi non poteva permettersi i pezzi migliori e più costosi. Come molti piatti della tradizione povera, anche lo spezzatino ha numerose piccole varianti. C'è chi aggiunge del vino rosso all'acqua di cottura, chi fa rosolare la carne in un "battuto di odori" che, oltre a cipolla e aglio, comprende anche carota e sedano. Spesso il piatto comprende patate, tagliate anch'esse a tocchetti e cotte insieme alla carne.
