Piatti tipici: Fritto misto di carne e verdura - Firenze in Toscana
La ricetta tradizionale del fritto misto fiorentino prevedeva a piacere anche altre specialità, come animelle e cotolette d'agnello, cervello e schienali di vitello, fegati. Anzi, animelle e cervello erano ingredienti irrinunciabili del vero fritto misto. Oggi queste carni sono poco usate e anche difficili da trovare, quindi spesso ci si limita al pollo con le verdure. Il risultato è ottimo e comunque con gli ingredienti ci si può davvero sbizzarrire, anche perché, come si dice a Firenze, "fritta è buona anche una ciabatta".
